Mejiro McQueen is a Pace Chaser for Medium and Long races, so having enough Stamina is important. She will also need Speed and Power to help overtake those ahead of her during the final spurt. Follow this up with Wit for her skills, and finally Guts.
It is important to note that if you cannot reach the stats recommended above, you can instead aim for a similar stat distribution. You can then compensate for the missing stats using skills. Additionally, if you are only planning on clearing a career run with Mejiro McQueen then you can aim for lower stat numbers, as the stats above are a baseline for Team Trials.

For Legacy Sparks, we recommend trying to find Stamina and Power sparks, as Mejiro McQueen's races are normally Medium and Long length. Based on which races you want to prioritize, get either Medium or Long sparks to help with those particular races.

Getting both recovery and speed skills are important, as you will need them for both Medium and Long races. Swinging Maestro and Gourmand are both strong skills that can keep your Stamina topped up throughout the race. Pace Chaser Corners and Homestretch Haste, on the other hand, can help you keep up with the pack and rush to the front respectively.
Additionally, Speed Star is a strong skill that can help Mejiro McQueen break out of the pack and head to the front of the race in the final stretch.
If you cannot get the recommended skills, you can replace them with similar skills that you have access to. You will just need to make sure that Mejiro McQueen can activate said skills in a race.
