To earn the Triple Crown Epithet, your trainee must be first place in these races: Satsuki Sho, Tokyo Yushun (Japanese Derby), and Kikuka Sho.

These are all G1 Races in the Classic Year. Completing the Satsuki Sho and the Japanese Derby should be straightforward, but Kikuka Sho may be difficult depending if you have enough Stamina (400 or more is almost safe) since it is a Long race.

Use Schedule Race as a Reminder

Use Schedule to take note of non-goal races

In the Races screen, you can check the schedule of all the available races. When you click on a race that your trainee is eligible to compete in, you can press Schedule.

When the schedule race is happening, the game will ask if you would like to compete in it. This is useful for keeping track of non-goal races.

You can only schedule one race at a time.
